Halloumi, Pepper and Couscous Bowls

Golden fried halloumi with roasted-style peppers and herby lemon couscous.

Ingredients

  • 250g couscous
  • 300ml hot vegetable stock
  • 2 tbsp olive oil
  • 2 red peppers, sliced
  • 1 red onion, sliced
  • 2 x 225g blocks halloumi, sliced (suitable for vegetarians)
  • 1 courgette, diced
  • Zest and juice of 1 lemon
  • Small handful fresh mint, chopped
  • Small handful fresh parsley, chopped
  • Black pepper to taste

Method

  1. Put the couscous in a heatproof bowl, pour over the hot stock, cover and leave for 5 minutes. Fluff with a fork.

  2. Heat half the oil in a large frying pan over a high heat. Fry the peppers, onion and courgette for 8 minutes until softened and lightly charred. Tip into a bowl.

  3. Wipe the pan, add the remaining oil and fry the halloumi for 1 to 2 minutes on each side until golden.

  4. Stir the lemon zest, juice, herbs and vegetables through the couscous and season with black pepper.

  5. Divide between bowls and top with the halloumi.
