One-Pot Cheeseburger Pasta

All the flavour of a cheeseburger in one pot: beef mince, pasta, tomato and melted cheese.

Ingredients

  • 1 tbsp vegetable oil
  • 1 onion, finely chopped
  • 500g lean beef mince
  • 2 cloves garlic, crushed
  • 2 tbsp tomato ketchup
  • 1 tbsp English mustard
  • 1 tbsp tomato purée
  • 400g tin chopped tomatoes
  • 600ml beef stock
  • 300g dried macaroni or small pasta shapes
  • 150g mature Cheddar, grated
  • Sliced gherkins, to serve (optional)
  • Salt and black pepper to taste

Method

  1. Heat the oil in a large lidded pan over a medium-high heat. Cook the onion for 3 minutes, add the mince and fry for 5 minutes until browned.

  2. Stir in the garlic, ketchup, mustard and tomato purée for 1 minute.

  3. Pour in the tomatoes and stock, season and bring to the boil. Add the pasta.

  4. Simmer, stirring often, for 10 to 12 minutes until the pasta is tender and the sauce has thickened.

  5. Stir in two thirds of the Cheddar until melted. Serve topped with the remaining cheese and gherkins if using.
