Turkey and Courgette Burgers

Ingredients

  • 500g turkey mince
  • 1 courgette, coarsely grated and squeezed dry
  • 1 small onion, finely grated
  • 1 egg
  • 3 tbsp dried breadcrumbs
  • 1 tsp smoked paprika
  • 1 tbsp vegetable oil
  • 4 burger buns
  • Lettuce leaves and sliced tomato
  • 100g Greek yoghurt
  • 1 tsp English mustard
  • Salt and black pepper to taste

Method

  1. Mix the turkey mince, courgette, onion, egg, breadcrumbs, paprika, 1 tsp salt and plenty of pepper in a bowl with your hands. Shape into four burgers.

  2. Heat the oil in a large frying pan over a medium heat. Fry the burgers for 6 to 7 minutes on each side until golden and cooked through with no pink meat.

  3. Stir the yoghurt with the mustard to make the sauce.

  4. Lightly toast the buns. Fill with lettuce, tomato, a burger and a spoonful of sauce.
