Honey Glazed Salmon with Greens

Ingredients

  • 300g basmati rice
  • 4 skinless salmon fillets
  • 3 tbsp runny honey
  • Juice of 1 lemon
  • 1 tbsp English mustard
  • 1 tbsp olive oil
  • 300g tenderstem broccoli
  • 2 cloves garlic, sliced
  • Salt and black pepper to taste

Method

  1. Cook the rice in salted boiling water for 10 to 12 minutes, then drain.

  2. Mix the honey, lemon juice and mustard in a small bowl. Season the salmon on both sides.

  3. Heat the oil in a large non-stick frying pan over a medium-high heat. Cook the salmon, skin side up, for 4 minutes until golden. Turn, pour over the glaze and cook for 3 to 4 minutes, spooning the glaze over, until just cooked through.

  4. Meanwhile, steam or boil the broccoli for 3 to 4 minutes. Toss with the garlic and a pinch of salt.

  5. Serve the salmon on the rice with the broccoli, spooning over the sticky pan juices.
