Quick Meatballs in Tomato Sauce with Spaghetti

Small, tender beef meatballs simmered in a garlicky tomato sauce and served over spaghetti.

Ingredients

  • 350g dried spaghetti
  • 500g beef mince
  • 1 small onion, finely grated
  • 1 egg
  • 3 tbsp dried breadcrumbs
  • 1 tsp dried oregano
  • 2 tbsp olive oil
  • 3 cloves garlic, crushed
  • 2 x 400g tins chopped tomatoes
  • 1 tsp caster sugar
  • Small handful fresh basil leaves
  • Salt and black pepper to taste

Method

  1. Mix the mince, onion, egg, breadcrumbs, oregano, 1 tsp salt and plenty of pepper in a bowl. Roll into 24 small meatballs, about the size of a golf ball.

  2. Heat half the oil in a large deep frying pan over a medium-high heat. Brown the meatballs for 5 minutes, turning, then remove to a plate.

  3. Add the remaining oil and garlic to the pan for 30 seconds. Pour in the tomatoes, add the sugar and season.

  4. Return the meatballs to the sauce and simmer for 10 minutes until cooked through.

  5. Meanwhile, cook the spaghetti in salted boiling water according to the packet instructions, then drain.

  6. Serve the spaghetti topped with the meatballs and sauce, scattered with basil.
