Spiced Beef Tacos with Lime Slaw

Ingredients

  • 1 tbsp vegetable oil
  • 1 onion, finely chopped
  • 500g lean beef mince
  • 2 tsp smoked paprika
  • 2 tsp ground cumin
  • 1 tsp garlic granules
  • 2 tbsp tomato purée
  • 150ml beef stock
  • 8 taco shells
  • 1/4 white cabbage, finely shredded
  • 2 carrots, grated
  • Juice of 2 limes
  • 2 tbsp chopped fresh coriander
  • 100g Greek yoghurt
  • 75g Cheddar, grated
  • Salt and black pepper to taste

Method

  1. Mix the cabbage, carrots, lime juice, coriander and a pinch of salt in a bowl to make the slaw.

  2. Heat the oil in a large frying pan over a medium-high heat. Cook the onion for 3 minutes, then add the mince and fry for 5 minutes, breaking it up, until browned.

  3. Stir in the paprika, cumin, garlic granules and tomato purée for 1 minute. Pour in the stock and simmer for 4 minutes until thick. Season well.

  4. Warm the taco shells in the oven according to the packet instructions.

  5. Fill the shells with the beef, slaw, yoghurt and Cheddar.
