Smoky Chicken Fajitas
Strips of chicken and sweet peppers in a smoked paprika and cumin spice mix, wrapped in warm tortillas.
Ingredients
- 500g skinless chicken breast, sliced into thin strips
- 2 tsp smoked paprika
- 1 tsp ground cumin
- 1 tsp garlic granules
- 1/2 tsp dried oregano
- 2 tbsp vegetable oil
- 1 red pepper, sliced
- 1 yellow pepper, sliced
- 1 red onion, sliced
- Juice of 1 lime
- 8 small flour tortillas
- 150ml soured cream
- 75g Cheddar, grated
- Salt and black pepper to taste
Method

Toss the chicken with the paprika, cumin, garlic granules, oregano, 1 tbsp of the oil and a good pinch of salt.

Heat a large frying pan over a high heat. Fry the chicken for 5 to 6 minutes, turning, until browned and cooked through. Tip onto a plate.

Add the remaining oil to the pan and fry the peppers and onion for 5 minutes until softened with a few charred edges.

Return the chicken to the pan, squeeze over the lime juice and stir for 1 minute.

Warm the tortillas in a dry pan or the microwave. Fill with the chicken and peppers and top with soured cream and Cheddar.
