Sage and Lemon Pork Escalopes

Thin pork loin steaks pan-fried with fresh sage and finished with a sharp lemon butter, served with green beans.

Ingredients

  • 4 pork loin steaks, about 125g each
  • 50g plain flour, seasoned
  • 2 tbsp olive oil
  • 40g butter
  • 8 fresh sage leaves
  • Zest and juice of 1 lemon
  • 100ml chicken stock
  • 300g green beans, trimmed
  • Salt and black pepper to taste

Method

  1. Place each pork steak between two sheets of cling film and bash to about 1cm thick. Coat in the seasoned flour.

  2. Cook the green beans in salted boiling water for 4 to 5 minutes, then drain.

  3. Heat the oil in a large frying pan over a medium-high heat. Fry the pork for 2 to 3 minutes on each side until golden and cooked through. Remove to a warm plate.

  4. Add the butter and sage leaves to the pan and fry for 1 minute until the sage is crisp.

  5. Pour in the stock, lemon zest and juice and bubble for 2 minutes. Spoon the sauce and sage over the pork and serve with the beans.
