Garlic Butter Steak Bites with Rocket
Juicy seared sirloin pieces tossed in garlic and parsley butter, served with peppery rocket and crispy potatoes.
Ingredients
- 800g baby potatoes, quartered
- 2 tbsp vegetable oil
- 700g sirloin steak, cut into 3cm cubes
- 50g butter
- 4 cloves garlic, crushed
- 2 tbsp chopped fresh parsley
- 1 tsp fresh thyme leaves
- 100g rocket
- 1 tbsp olive oil
- Juice of 1/2 lemon
- Salt and black pepper to taste

Boil the potatoes in salted water for 8 minutes. Drain well and leave to steam dry.

Heat 1 tbsp of the oil in a large frying pan over a medium-high heat. Fry the potatoes for 8 to 10 minutes, turning, until crisp and golden. Season and keep warm.

Pat the steak dry and season well. Heat the remaining oil in a second pan over a very high heat and sear the steak for 2 to 3 minutes, turning, until browned.

Lower the heat. Add the butter, garlic and thyme and spoon the foaming butter over the steak for 1 minute. Stir in the parsley.

Toss the rocket with the olive oil and lemon juice. Serve the steak bites with the potatoes and rocket.
