Bauernfrühstück (German Farmer's Breakfast)

Ingredients

  • 600g cooked waxy potatoes, cooled and sliced
  • 2 tbsp sunflower oil
  • 150g smoked bacon lardons
  • 1 large onion, sliced
  • 1 red pepper, diced
  • 6 eggs
  • 3 tbsp whole milk
  • 1/2 tsp sweet paprika
  • Salt and black pepper to taste
  • 2 tbsp chopped fresh chives

Method

  1. Heat the oil in a large non-stick frying pan over a medium-high heat. Fry the potatoes for 10 minutes, turning occasionally, until golden. Remove to a plate.

  2. Fry the bacon in the same pan for 4 minutes, then add the onion and pepper and cook for 6 minutes until soft.

  3. Return the potatoes to the pan and stir to combine.

  4. Whisk the eggs, milk, paprika, salt and pepper together and pour over the potatoes. Reduce the heat to medium-low and cook for 5 to 6 minutes, lifting the edges, until the eggs are just set.

  5. Scatter with chives and serve straight from the pan with rye bread.
