Leberkäse Rolls
A baked Bavarian meatloaf of finely minced pork, beef and bacon, sliced hot into crusty rolls with sweet mustard.
Ingredients
- 500g pork mince (20% fat)
- 300g beef mince
- 150g smoked streaky bacon, finely chopped
- 1 small onion, grated
- 2 cloves garlic, crushed
- 2 tsp salt
- 1 tsp white pepper
- 1 tsp ground marjoram
- 1/2 tsp ground nutmeg
- 1/4 tsp ground allspice
- 100ml iced water
- 8 crusty white rolls (Semmel or Brötchen), split
- Sweet Bavarian mustard or German mustard, to serve
- Gherkins, to serve (optional)
Method

Heat the oven to 180°C (160°C fan). Grease and line a 900g loaf tin.

Put the pork, beef, bacon, onion, garlic, salt, pepper, marjoram, nutmeg and allspice in a food processor and blend in short bursts, adding the iced water gradually, until a very fine, smooth paste forms. You may need to do this in two batches.

Press the mixture firmly into the tin, smoothing the top and tapping the tin to remove air pockets. Score the top lightly in a diamond pattern.

Bake for 1 hour to 1 hour 10 minutes until golden and the centre reaches 72°C. Rest for 10 minutes.

Slice the leberkäse thickly and tuck into the rolls spread with mustard. Add gherkins if you like and serve warm.
