Marble Cake (Marmorkuchen)

Ingredients

  • 250g butter, softened
  • 200g caster sugar
  • 4 eggs
  • 1 tsp vanilla extract
  • 300g plain flour
  • 3 tsp baking powder
  • 125ml whole milk
  • 30g cocoa powder
  • 2 tbsp whole milk, for the cocoa mixture
  • 1 tbsp caster sugar, for the cocoa mixture
  • Icing sugar, to dust

Method

  1. Heat the oven to 180°C (160°C fan). Grease and line a 1.5 litre loaf or Bundt tin.

  2. Beat the butter and sugar until pale and fluffy. Beat in the eggs one at a time, then the vanilla.

  3. Sift in the flour and baking powder and fold in alternately with the 125ml milk until smooth.

  4. Transfer one third of the batter to a separate bowl and stir in the cocoa, the 2 tbsp milk and the 1 tbsp sugar.

  5. Spoon alternating dollops of the pale and chocolate batters into the tin and drag a skewer through to create a marbled pattern.

  6. Bake for 55 to 60 minutes until a skewer comes out clean. Cool in the tin for 15 minutes, then turn out and dust with icing sugar.
