Fleischkäse with Fried Eggs & Potatoes

Thick slices of pan-fried Fleischkäse served with crispy fried potatoes and runny fried eggs.

Ingredients

  • 4 thick slices Fleischkäse or Leberkäse (about 150g each), from German delis or online
  • 700g waxy potatoes, boiled and sliced
  • 3 tbsp sunflower oil
  • 1 onion, sliced
  • 4 eggs
  • 30g butter
  • Salt and black pepper to taste
  • Sweet German mustard and gherkins, to serve

Method

  1. Heat 2 tbsp of the oil in a large frying pan over a medium-high heat. Fry the potatoes for 12 to 15 minutes, turning, until golden and crisp. Add the onion for the last 5 minutes. Season and keep warm.

  2. In a second pan, heat the remaining oil and fry the Fleischkäse slices for 3 to 4 minutes per side until crisp and golden.

  3. Melt the butter in a clean pan and fry the eggs until the whites are set but the yolks are runny.

  4. Plate the Fleischkäse with the potatoes and an egg on top, and serve with mustard and gherkins.
