Goulash Soup (Gulaschsuppe)
A rich, paprika-spiced beef soup with peppers, potatoes and onions.
Ingredients
- 800g braising steak, cut into 2cm cubes
- 3 tbsp sunflower oil
- 3 large onions, chopped
- 3 cloves garlic, crushed
- 2 tbsp tomato purée
- 2 tbsp sweet paprika
- 1 tsp hot paprika (optional)
- 1 tsp caraway seeds, lightly crushed
- 2 bay leaves
- 1.5 litres beef stock
- 2 red peppers, diced
- 3 potatoes, peeled and diced
- Salt and black pepper to taste
- Sour cream and chopped fresh parsley, to serve
Method

Heat 2 tbsp of the oil in a large casserole over a high heat and brown the beef in batches for 5 minutes per batch. Set aside.

Add the remaining oil and cook the onions for 10 minutes until soft. Add the garlic, tomato purée, both paprikas and caraway and stir for 1 minute.

Return the beef, add the stock and bay leaves, bring to the boil, cover and simmer for 1 hour 30 minutes.

Add the peppers and potatoes and simmer for a further 25 to 30 minutes until the meat and vegetables are tender and the soup has thickened slightly.

Remove the bay leaves, season well and serve with a spoonful of sour cream and parsley.
