Kartoffelpuffer (German Potato Pancakes)

Ingredients

  • 1kg floury potatoes such as Maris Piper, peeled
  • 1 onion
  • 2 eggs
  • 3 tbsp plain flour
  • 1 tsp salt
  • 1/4 tsp freshly grated nutmeg
  • Black pepper to taste
  • Sunflower oil, for frying
  • Apple sauce and sour cream, to serve

Method

  1. Grate the potatoes and onion coarsely, then squeeze out as much liquid as possible in a clean tea towel. Let the squeezed liquid settle for 2 minutes, pour off the water and keep the starch at the bottom.

  2. Mix the potato, onion, starch, eggs, flour, salt, nutmeg and pepper in a bowl.

  3. Heat 1cm of oil in a large frying pan over a medium-high heat. Add heaped tablespoons of mixture, flatten them and fry for 3 to 4 minutes per side until deep golden and crisp.

  4. Drain on kitchen paper and serve hot with apple sauce and sour cream.
