Obatzda with Pretzels

A Bavarian beer garden cheese spread of ripe Camembert, butter, paprika and onion, served with pretzels.

Ingredients

  • 250g ripe Camembert or Brie, at room temperature
  • 60g unsalted butter, softened
  • 100g cream cheese
  • 1 tsp sweet paprika
  • 1/2 tsp ground caraway seeds
  • 1 small onion, finely chopped
  • 2 tbsp wheat beer or pale lager
  • Salt and black pepper to taste
  • Chives, finely chopped, to serve
  • Radishes and soft pretzels, to serve

Method

  1. Cut the rind off the Camembert if you prefer a milder spread, then mash the cheese in a bowl with a fork until creamy.

  2. Mix in the butter, cream cheese, paprika, caraway and half the onion until well blended.

  3. Add the beer a little at a time until the spread is creamy but still thick. Season to taste.

  4. Pile into a serving bowl, scatter with the remaining onion and chives and chill for 30 minutes.

  5. Serve with pretzels and radishes.
