Ingredients

  • 800g floury potatoes, peeled and cubed
  • 3 cooking apples, peeled, cored and sliced
  • 1 tbsp caster sugar
  • 50g butter
  • 100ml warm whole milk
  • 1/4 tsp freshly grated nutmeg
  • 2 large onions, sliced
  • 2 tbsp sunflower oil
  • Salt and black pepper to taste

Method

  1. Boil the potatoes in salted water for 18 minutes until tender, adding the apples and sugar for the last 8 minutes. Drain well.

  2. Mash the potatoes and apples together with half the butter and the warm milk until fluffy. Season with salt, pepper and nutmeg.

  3. Heat the oil and remaining butter in a frying pan over a medium heat and cook the onions for 15 minutes until deep golden.

  4. Serve the mash topped with the fried onions.
