German Pancakes (Pfannkuchen)

Large, thin German pancakes, golden and soft, served with sugar and lemon or fruit compote.

Ingredients

  • 250g plain flour
  • 1/4 tsp salt
  • 2 tbsp caster sugar
  • 3 eggs
  • 500ml whole milk
  • 100ml sparkling water
  • Unsalted butter, for frying
  • Caster sugar and lemon wedges, to serve
  • Apple sauce or fruit compote, to serve

Method

  1. Sift the flour, salt and sugar into a large bowl. Make a well in the centre and add the eggs.

  2. Gradually whisk in the milk to make a smooth batter, then whisk in the sparkling water. Rest for 15 minutes.

  3. Melt a knob of butter in a 24cm non-stick frying pan over a medium heat. Pour in a small ladleful of batter, tilting to cover the base.

  4. Cook for 1 to 2 minutes until the edges are golden, then flip and cook for 1 minute more. Repeat to make about 8 pancakes, keeping them warm.

  5. Serve rolled up with sugar and lemon, or filled with apple sauce.
