Currywurst with Chips

Grilled pork sausage with curry ketchup sauce, crispy chips and a dollop of mayonnaise, German snack-bar style.

Ingredients

  • 4 pork bratwurst
  • 800g floury potatoes such as Maris Piper, cut into chips
  • 3 tbsp sunflower oil
  • Salt to taste
  • For the sauce: 250ml tomato ketchup
  • For the sauce: 100ml water
  • For the sauce: 2 tbsp Worcestershire sauce
  • For the sauce: 1 tbsp curry powder
  • For the sauce: 1 tsp sweet paprika
  • For the sauce: 1 tbsp brown sugar
  • For the sauce: 1 tbsp white wine vinegar
  • Mayonnaise and extra curry powder, to serve

Method

  1. Heat the oven to 220°C (200°C fan). Toss the chips with the oil and salt and roast on a large tray for 30 to 35 minutes, turning once, until golden and crisp.

  2. Mix all the sauce ingredients in a pan and simmer for 10 minutes until thick.

  3. Fry or grill the bratwurst for 12 to 15 minutes until browned and cooked through. Slice into rounds.

  4. Pile the chips and sausage onto plates, pour over the sauce, add a spoonful of mayonnaise and dust with curry powder.
