Eintopf (German One-Pot Stew)

A simple, filling one-pot stew of potatoes, carrots, cabbage and smoked sausage.

Ingredients

  • 2 tbsp sunflower oil
  • 1 large onion, chopped
  • 3 carrots, sliced
  • 1 small savoy cabbage, shredded
  • 800g waxy potatoes, peeled and cubed
  • 1 leek, sliced and washed
  • 1.2 litres beef or vegetable stock
  • 2 bay leaves
  • 1 tsp caraway seeds
  • 300g smoked sausage (such as Kielbasa or Mettwurst), sliced
  • Salt and black pepper to taste
  • Chopped fresh flat-leaf parsley, to serve
  • Medium mustard, to serve

Method

  1. Heat the oil in a large pan and cook the onion, carrots and leek for 8 minutes.

  2. Add the potatoes, stock, bay leaves and caraway, bring to the boil, then simmer for 15 minutes.

  3. Add the cabbage and sausage and simmer for 20 to 25 minutes until everything is tender and the broth is slightly thickened.

  4. Remove the bay leaves, season to taste and serve scattered with parsley, with mustard on the side.
