Rahmchampignons (Creamy Mushrooms)

Ingredients

  • 600g mixed mushrooms (chestnut and button), halved or quartered
  • 2 tbsp sunflower oil
  • 30g butter
  • 1 onion, finely chopped
  • 2 cloves garlic, crushed
  • 100ml dry white wine
  • 200ml double cream
  • 2 tbsp chopped fresh flat-leaf parsley
  • Salt and black pepper to taste
  • Toasted bread or boiled potatoes, to serve

Method

  1. Heat the oil in a large frying pan over a high heat and fry the mushrooms in two batches for 6 to 8 minutes until golden. Set aside.

  2. Melt the butter in the pan and cook the onion for 4 minutes, then add the garlic for 1 minute.

  3. Add the wine and boil for 2 minutes. Stir in the cream and simmer for 3 minutes.

  4. Return the mushrooms, season to taste and scatter with parsley. Serve on toast or with potatoes.
