German Pork Chops with Mushroom Sauce

Pan-seared pork chops in a creamy mushroom, onion and paprika sauce.

Ingredients

  • 4 pork loin chops, bone in (about 220g each)
  • Salt and black pepper to taste
  • 2 tbsp plain flour
  • 2 tbsp sunflower oil
  • 30g butter
  • 1 onion, sliced
  • 250g chestnut mushrooms, sliced
  • 1 tsp sweet paprika
  • 150ml dry white wine
  • 200ml chicken stock
  • 100ml double cream
  • Chopped fresh flat-leaf parsley, to serve

Method

  1. Season the chops and dust with the flour. Heat the oil in a large frying pan over a medium-high heat and cook for 5 to 6 minutes per side until golden and cooked through. Set aside and keep warm.

  2. Add the butter to the pan and cook the onion for 5 minutes, then add the mushrooms and paprika and cook for 8 minutes until golden.

  3. Pour in the wine and boil for 2 minutes, then add the stock and simmer for 6 minutes.

  4. Stir in the cream, season and simmer for 3 minutes. Return the chops to warm through.

  5. Scatter with parsley and serve with potatoes or noodles.
