German Sauerkraut with Apples

Ingredients

  • 2 tbsp sunflower oil or goose fat
  • 1 large onion, sliced
  • 2 apples, peeled and grated
  • 1 x 500g jar or pouch sauerkraut, drained
  • 1 tsp caraway seeds
  • 1 tsp caster sugar
  • 150ml dry white wine or apple juice
  • 2 bay leaves
  • 6 juniper berries, crushed
  • Salt and black pepper to taste

Method

  1. Heat the oil in a pan and cook the onion for 6 minutes until soft.

  2. Add the apples, sauerkraut, caraway, sugar, wine, bay leaves and juniper.

  3. Cover and simmer gently for 25 to 30 minutes, stirring occasionally, until tender and the liquid has reduced.

  4. Remove the bay leaves, season and serve with sausages or roast pork.
