Classic Bread Sauce with Nutmeg

Ingredients

  • 500ml whole milk
  • 1 small onion, halved
  • 2 bay leaves
  • 80g stale white bread, crusts removed and torn into pieces
  • 1/2 tsp freshly grated nutmeg, plus extra to serve
  • 20g butter
  • 3 tbsp double cream
  • Salt and white pepper to taste

Method

  1. Put the milk, onion halves, bay leaves and nutmeg in a pan and bring slowly to a simmer.

  2. Remove from the heat, cover and leave to infuse for 20 minutes.

  3. Strain the milk back into the pan and discard the onion and bay.

  4. Add the torn bread and warm gently, whisking until the bread dissolves into a thick, smooth sauce.

  5. Stir in the butter and cream, season with salt and white pepper and finish with a little extra nutmeg.
