Traditional Christmas Nut Roast

Ingredients

  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 2 celery sticks, finely chopped
  • 1 carrot, grated
  • 2 cloves garlic, crushed
  • 300g mixed nuts (cashews, walnuts and hazelnuts), finely chopped
  • 100g fresh white breadcrumbs
  • 2 eggs, beaten
  • 150ml vegetable stock
  • 1 tbsp chopped fresh thyme
  • 2 tbsp chopped fresh parsley
  • Salt and black pepper to taste

Method

  1. Heat the oven to 180°C (160°C fan)/gas mark 4. Grease and line a 900g loaf tin.

  2. Heat the oil and soften the onion, celery, carrot and garlic for 8 minutes.

  3. Tip into a large bowl and mix in the nuts, breadcrumbs, thyme, parsley, salt and pepper.

  4. Stir in the eggs and stock until the mixture holds together.

  5. Press firmly into the tin and level the top.

  6. Bake for 45 to 50 minutes until firm and golden.

  7. Rest for 10 minutes, then turn out and slice.
