Homemade Turkey Gravy

A rich gravy made from the roasting tin juices, finished with a splash of white wine.

Ingredients

  • Juices and sediment from the roast turkey tin
  • 2 tbsp plain flour
  • 100ml dry white wine
  • 600ml turkey or chicken stock
  • 1 tsp redcurrant jelly
  • Salt and black pepper to taste

Method

  1. Pour off all but about 2 tablespoons of fat from the roasting tin and place the tin on a low heat.

  2. Stir in the flour and cook for 2 minutes, scraping up the sediment.

  3. Gradually add the wine and stock, whisking until smooth.

  4. Stir in the redcurrant jelly and simmer for 10 minutes until slightly thickened.

  5. Season to taste, strain into a warm jug and serve.
