Smoked Mackerel Pâté

A peppery smoked mackerel pâté lifted with lemon zest and yoghurt, served with oatcakes.

Ingredients

  • 300g smoked mackerel fillets, skinned
  • 150g full-fat cream cheese
  • 2 tbsp natural yoghurt
  • Zest and juice of 1 lemon
  • 1 tbsp chopped fresh parsley
  • Pinch of cayenne pepper
  • Freshly ground black pepper
  • 12 oatcakes or 6 slices of toast, to serve

Method

  1. Flake the mackerel into a bowl, checking carefully for any bones.

  2. Add the cream cheese, yoghurt, lemon zest and juice and the cayenne pepper.

  3. Mash with a fork for a rustic texture, or blend briefly for a smoother pâté.

  4. Stir in the parsley and season with black pepper.

  5. Spoon into a serving dish, chill for 15 minutes and serve with the oatcakes or toast.
