Roast Turkey Crown with Sage Stuffing

Ingredients

  • 2.5kg turkey crown, at room temperature
  • 50g butter, softened
  • 8 rashers streaky bacon
  • 200g pork sausage meat
  • 1 onion, finely chopped
  • 2 tbsp chopped fresh sage
  • 75g fresh white breadcrumbs
  • 1 egg, beaten
  • 200ml chicken stock
  • Salt and black pepper to taste

Method

  1. Heat the oven to 190°C (170°C fan)/gas mark 5.

  2. Rub the butter over the crown, season well and lay the bacon over the breast. Place in a tin with the stock.

  3. Roast for 1 hour 45 minutes, basting occasionally. Cover with foil if the bacon browns too quickly.

  4. Mix the sausage meat, onion, sage, breadcrumbs, egg, salt and pepper and shape into 12 balls.

  5. Add the stuffing balls to the tin for the last 30 minutes.

  6. The turkey is cooked when the juices run clear and a probe reads at least 75°C.

  7. Rest, covered, for 30 minutes before carving.
