Traditional Apple Sauce

A tart, chunky apple sauce made from Bramley apples, the classic partner to roast pork and goose.

Ingredients

  • 700g Bramley apples, peeled, cored and chopped
  • 2 tbsp water
  • 1 strip of lemon peel
  • 25g butter
  • 1 to 2 tbsp caster sugar, to taste

Method

  1. Put the apples, water and lemon peel in a pan, cover and cook over a low heat for 10 to 12 minutes, stirring occasionally, until soft.

  2. Remove the lemon peel.

  3. Beat the apples with a wooden spoon for a chunky sauce, or blend for a smooth one.

  4. Stir in the butter and sugar to taste.

  5. Serve warm or cold.
