Pickled Red Cabbage

A sweet and sharp spiced pickled red cabbage, made ahead and served with ham, cold cuts and cheese.

Ingredients

  • 1 red cabbage, about 700g, finely shredded
  • 1 tbsp sea salt
  • 500ml malt vinegar
  • 100g soft light brown sugar
  • 1 tsp black peppercorns
  • 1 tsp whole allspice berries
  • 4 whole cloves
  • 1 cinnamon stick

Method

  1. Layer the cabbage in a bowl, sprinkling each layer with salt. Cover and leave for 24 hours.

  2. Rinse the cabbage well, drain thoroughly and pack into sterilised jars.

  3. Put the vinegar, sugar and spices into a pan and bring to the boil, stirring until the sugar dissolves. Simmer for 5 minutes.

  4. Leave the vinegar to cool completely, then pour over the cabbage, covering it fully.

  5. Seal and store in a cool, dark place for at least 1 week before eating. Keep in the fridge once opened.
