Chips, Cheese and Gravy

Golden chips topped with melted mature Cheddar and a rich onion gravy: a northern pub favourite.

Ingredients

  • 800g floury potatoes, cut into thick chips
  • Oil for deep frying
  • 150g mature Cheddar, grated
  • 25g butter
  • 1 onion, finely sliced
  • 2 tbsp plain flour
  • 400ml vegetable stock
  • 1 tbsp soy sauce
  • Black pepper to taste

Method

  1. Soak the chips in cold water for 10 minutes, drain and dry. Fry at 140°C for 6 minutes and drain.

  2. Melt the butter in a pan and cook the onion for 10 minutes until golden.

  3. Stir in the flour, then gradually add the stock and soy sauce. Simmer for 10 minutes until thickened to a gravy.

  4. Heat the oil to 190°C and fry the chips for 4 to 5 minutes until golden and crisp. Drain well.

  5. Pile the hot chips into bowls, scatter over the Cheddar and pour over the gravy. Season with black pepper.
