Fish Finger Sandwich

Ingredients

  • 400g skinless cod loin, cut into 8 fingers
  • 50g plain flour, seasoned
  • 1 egg, beaten
  • 100g dried breadcrumbs
  • 4 tbsp vegetable oil
  • 8 slices white bread, buttered
  • 4 tbsp tartare sauce
  • 4 lettuce leaves
  • Tomato ketchup, to serve
  • Salt and black pepper to taste

Method

  1. Coat each fish finger in the seasoned flour, then the beaten egg, then the breadcrumbs.

  2. Heat the oil in a large frying pan over a medium-high heat.

  3. Fry the fish fingers for 2 to 3 minutes on each side until golden and cooked through. Drain on kitchen paper.

  4. Spread four slices of bread with tartare sauce and top with lettuce and two fish fingers each.

  5. Add a squeeze of ketchup, top with the remaining bread and cut in half to serve.
