Gammon Steak with Egg and Pineapple

A juicy pan-fried gammon steak topped with a fried egg and caramelised pineapple, served with chips.

Ingredients

  • 800g floury potatoes, cut into thick chips
  • Oil for deep frying
  • 4 gammon steaks, about 200g each
  • 1 tbsp vegetable oil
  • 25g butter
  • 4 pineapple rings in juice, drained
  • 4 large eggs
  • 200g frozen peas
  • Black pepper to taste

Method

  1. Soak the chips in cold water for 10 minutes, drain and dry. Fry at 140°C for 6 minutes, then drain.

  2. Snip the fat on each gammon steak at 2cm intervals to stop it curling.

  3. Heat the vegetable oil in a large frying pan and fry the steaks for 4 minutes on each side until cooked through. Remove and keep warm.

  4. Add the butter and fry the pineapple rings for 2 minutes on each side until caramelised.

  5. Boil the peas for 3 minutes and drain. Fry the chips again at 190°C for 4 to 5 minutes until golden.

  6. Fry the eggs in a little oil until the whites are set. Top each steak with a pineapple ring and an egg, add black pepper and serve with chips and peas.
