Fisherman's Pie

Mixed white and smoked fish in a creamy parsley sauce beneath fluffy mashed potato.

Ingredients

  • 500g skinless cod or haddock fillet
  • 300g smoked haddock fillet
  • 150g raw peeled prawns
  • 600ml whole milk
  • 1 bay leaf
  • 50g butter
  • 50g plain flour
  • 3 tbsp chopped fresh parsley
  • 2 hard-boiled eggs, quartered
  • 1kg floury potatoes, peeled
  • 50g butter
  • 75g mature Cheddar, grated
  • Salt and black pepper to taste

Method

  1. Poach the cod and smoked haddock in the milk with the bay leaf for 8 minutes. Lift out the fish and strain the milk.

  2. Boil the potatoes for 20 minutes, drain and mash with the butter and seasoning.

  3. Melt 50g butter, stir in the flour and cook for 1 minute. Gradually whisk in the warm milk and simmer for 5 minutes until thick.

  4. Flake the fish and fold into the sauce with the prawns, parsley and eggs.

  5. Tip into a 2 litre dish and top with mash and Cheddar.

  6. Bake at 200°C (180°C fan) for 30 minutes until golden and bubbling.
