Toad in the Hole

Sausages baked in a crisp, puffed Yorkshire pudding batter and served with onion gravy.

Ingredients

  • 8 pork sausages
  • 2 tbsp vegetable oil
  • 140g plain flour
  • 4 eggs
  • 200ml milk
  • 1 tsp English mustard powder
  • 1 tsp fresh thyme leaves
  • Salt and black pepper to taste
  • Onion gravy, to serve

Method

  1. Whisk the flour, eggs, milk, mustard powder, thyme and seasoning into a smooth batter. Rest for 30 minutes.

  2. Preheat the oven to 220°C (200°C fan). Pour the oil into a metal roasting tin, add the sausages and roast for 10 minutes.

  3. Remove the tin, working quickly, and pour in the batter around the sausages. It should sizzle.

  4. Return to the oven and bake for 30 minutes without opening the door until risen and deep golden.

  5. Serve at once with onion gravy and greens.
