Chocolate Fudge Cake
A deep, moist chocolate sponge with a rich fudge frosting, served warm with cream.
Ingredients
- 200g butter, softened
- 200g dark brown sugar
- 4 large eggs
- 200g self-raising flour
- 50g cocoa powder
- 1 tsp baking powder
- 4 tbsp whole milk
- 150g dark chocolate, chopped
- 100g butter, for the frosting
- 150ml double cream
- 100g icing sugar
- Pouring cream, to serve

Preheat the oven to 180°C (160°C fan). Grease and line two 20cm sandwich tins.

Beat the butter and brown sugar until pale and fluffy. Beat in the eggs one at a time.

Sift in the flour, cocoa and baking powder and fold in with the milk until smooth.

Divide between the tins and bake for 25 minutes until risen and a skewer comes out clean. Cool in the tins for 10 minutes, then turn out.

Melt the chocolate, 100g butter and the double cream together over a low heat. Whisk in the icing sugar and leave to thicken for 15 minutes.

Sandwich the cakes together with some of the frosting, then cover the top and sides with the rest. Serve with pouring cream.
