Apple Sauce

Tart Bramley apples cooked down to a soft, lightly sweet sauce for roast pork.

Ingredients

  • 4 Bramley cooking apples, about 800g
  • 2 tbsp water
  • 1 tbsp caster sugar, or to taste
  • 15g butter
  • 1 strip lemon peel

Method

  1. Peel, core and roughly chop the apples.

  2. Put the apples, water, lemon peel and sugar in a saucepan, cover and cook gently for 15 minutes, stirring now and then, until the apples collapse.

  3. Remove the lemon peel and beat with a wooden spoon for a rustic texture, or mash with a fork for a smoother finish.

  4. Stir in the butter and add more sugar if the apples are very sharp.

  5. Serve warm or cold. It keeps in the fridge for up to 4 days.
