Braised Red Cabbage with Apple

Red cabbage slowly braised with apple, vinegar and a touch of spice, excellent with pork and goose.

Ingredients

  • 1 small red cabbage, about 800g, finely shredded
  • 2 eating apples, peeled and grated
  • 1 onion, thinly sliced
  • 25g butter
  • 3 tbsp red wine vinegar
  • 2 tbsp soft brown sugar
  • 1/2 tsp ground cinnamon
  • Salt and black pepper to taste

Method

  1. Melt the butter in a large heavy pan and soften the onion for 5 minutes.

  2. Add the cabbage, apples, vinegar, sugar, cinnamon and a good pinch of salt. Stir well.

  3. Cover and cook over a low heat for 50 to 60 minutes, stirring now and then, adding a splash of water if the pan becomes dry.

  4. Taste and adjust with a little more vinegar or sugar. Serve hot, or make a day ahead and reheat.
