Sage and Onion Stuffing

Ingredients

  • 50g butter
  • 2 large onions, finely chopped
  • 200g fresh white breadcrumbs
  • 2 tbsp chopped fresh sage
  • 1 tbsp chopped fresh parsley
  • 1 egg, beaten
  • 100ml hot vegetable stock
  • Salt and black pepper to taste

Method

  1. Heat the oven to 190°C (170°C fan)/gas 5 and grease a small baking dish.

  2. Melt the butter in a frying pan and cook the onions gently for 10 minutes until soft but not coloured. Leave to cool slightly.

  3. Mix the onions with the breadcrumbs, sage, parsley, egg and seasoning, then add enough stock to make a moist mixture.

  4. Spoon into the dish and press down lightly.

  5. Bake for 30 minutes until golden and crisp on top.
