Horseradish Sauce

Ingredients

  • 4 tbsp grated fresh horseradish, or jarred horseradish, drained
  • 150ml double cream
  • 1 tsp white wine vinegar
  • 1 tsp English mustard
  • 1 tsp caster sugar
  • Salt and white pepper to taste

Method

  1. Peel and finely grate the fresh horseradish, or squeeze jarred horseradish dry in a clean tea towel.

  2. Lightly whip the cream until it just holds its shape.

  3. Fold in the horseradish, vinegar, mustard and sugar.

  4. Season with salt and white pepper and chill for 30 minutes before serving.

  5. Taste and add more horseradish if you like it hotter. It keeps in the fridge for 3 days.
