Cranberry Sauce

A bright, tangy cranberry sauce with a hint of orange, lovely with turkey, chicken and gammon.

Ingredients

  • 300g fresh or frozen cranberries
  • 100g caster sugar
  • Zest and juice of 1 orange
  • 50ml water
  • 1 cinnamon stick (optional)

Method

  1. Put the cranberries, sugar, orange zest and juice, water and cinnamon in a saucepan.

  2. Heat gently, stirring, until the sugar dissolves.

  3. Simmer for 10 to 12 minutes until most of the berries have burst and the sauce thickens.

  4. Remove the cinnamon stick and leave to cool, as the sauce thickens further as it cools.

  5. Serve warm or chilled. It keeps in the fridge for up to a week.
