Leeks in Cheese Sauce

Soft braised leeks coated in a creamy Cheddar sauce, a lovely partner for roast lamb or gammon.

Ingredients

  • 6 medium leeks, trimmed and cut into 4cm lengths
  • 40g butter
  • 40g plain flour
  • 500ml whole milk
  • 120g mature Cheddar, grated
  • 1 tsp wholegrain mustard
  • Salt and black pepper to taste

Method

  1. Heat the oven to 200°C (180°C fan)/gas 6. Wash the leeks well and simmer in salted water for 6 minutes until just tender. Drain and squeeze out any excess water.

  2. Melt the butter in a pan, stir in the flour and cook for 1 minute.

  3. Gradually whisk in the milk and simmer for 5 minutes until thickened.

  4. Off the heat, stir in two thirds of the cheese, the mustard and seasoning.

  5. Arrange the leeks in a baking dish, pour over the sauce, top with the remaining cheese and bake for 15 to 20 minutes until golden.
