Beef Gravy from Roasting Juices

A proper dark gravy made in the roasting tin from the beef juices, flour and good stock.

Ingredients

  • Juices and sediment from the roasting tin
  • 2 tbsp plain flour
  • 500ml hot beef stock
  • 1 tsp Worcestershire sauce
  • 1 tsp gravy browning (optional)
  • Salt and black pepper to taste

Method

  1. Pour off all but 2 tablespoons of fat from the roasting tin, leaving the dark sediment behind.

  2. Place the tin over a medium heat, sprinkle in the flour and stir for 2 minutes to cook it out and brown it slightly.

  3. Gradually pour in the hot stock, stirring and scraping up all the sticky bits from the base of the tin.

  4. Add the Worcestershire sauce and simmer for 8 to 10 minutes until thickened. Add gravy browning if you want a darker colour.

  5. Season to taste, strain into a warm jug and serve.
