Roast Turkey Crown

A turkey crown is a simple way to serve turkey for a smaller table, with butter under the skin to keep it moist.

Ingredients

  • 2kg turkey crown, at room temperature
  • 75g softened butter
  • 1 tbsp chopped fresh thyme
  • 1 lemon, zested and halved
  • 6 rashers streaky bacon
  • 1 onion, quartered
  • 250ml chicken stock
  • Salt and black pepper to taste

Method

  1. Heat the oven to 190°C (170°C fan)/gas 5. Mix the butter with the thyme, lemon zest and plenty of seasoning.

  2. Loosen the skin over the breast with your fingers and spread most of the butter underneath. Rub the rest over the skin.

  3. Put the onion and lemon halves in a roasting tin, pour in the stock and sit the turkey on top. Lay the bacon across the breast.

  4. Roast for 1 hour 45 minutes, basting every 30 minutes, until the juices run clear when pierced. A meat thermometer should read 70°C in the thickest part.

  5. Rest under foil for 30 minutes, then carve. Use the tin juices for gravy.
