Mint Sauce

A sharp, fresh sauce of chopped mint, vinegar and sugar, the classic partner for roast lamb.

Ingredients

  • Small bunch fresh mint, leaves only, about 25g
  • 2 tsp caster sugar
  • 2 tbsp boiling water
  • 3 tbsp malt or white wine vinegar
  • Pinch of salt

Method

  1. Strip the mint leaves from the stalks and chop them very finely.

  2. Put the chopped mint in a small bowl with the sugar and pinch of salt.

  3. Pour over the boiling water and stir until the sugar dissolves.

  4. Stir in the vinegar and leave for at least 30 minutes so the flavours develop.

  5. Taste and add a little more sugar or vinegar to balance. Serve in a small jug with roast lamb.
