Spotted Dick

A steamed suet pudding studded with currants, served with plenty of hot custard.

Ingredients

  • 225g self-raising flour
  • 110g shredded suet
  • 75g caster sugar
  • 150g currants
  • Zest of 1 lemon
  • About 150ml whole milk
  • Butter, for greasing
  • Pinch of salt

Method

  1. Butter a 1.2 litre pudding basin and a sheet of baking paper and foil for the lid.

  2. Mix the flour, salt, suet, sugar, currants and lemon zest in a bowl.

  3. Stir in enough milk to make a soft, dropping consistency.

  4. Spoon into the basin. Make a pleat in the paper and foil, place over the basin, and tie securely with string.

  5. Steam above simmering water in a covered pan for 2 hours, topping up the water as needed. Turn out and serve with custard.
