Baked Gammon with Honey and Mustard

A boiled then baked gammon joint with a sticky honey and mustard glaze, equally good hot or cold.

Ingredients

  • 2kg unsmoked gammon joint
  • 1 onion, halved
  • 2 carrots, roughly chopped
  • 2 bay leaves
  • 10 black peppercorns
  • 3 tbsp runny honey
  • 2 tbsp wholegrain mustard
  • 1 tbsp soft brown sugar
  • About 20 whole cloves (optional)

Method

  1. Put the gammon in a large pan with the onion, carrots, bay leaves and peppercorns. Cover with cold water, bring to the boil, then simmer gently for 1 hour 15 minutes.

  2. Heat the oven to 200°C (180°C fan)/gas 6. Lift the gammon out of the pan and leave until cool enough to handle.

  3. Cut away the skin, leaving a thin layer of fat. Score the fat in a diamond pattern and press a clove into each diamond if using.

  4. Mix the honey, mustard and sugar and brush half over the gammon. Place in a roasting tin and bake for 15 minutes.

  5. Brush with the remaining glaze and bake for a further 15 minutes until sticky and golden. Rest for 15 minutes before carving.
