Cheeseburger Stuffed Potatoes
Crisp baked potatoes filled with seasoned beef mince, melted Cheddar and a ketchup and mustard topping.
Ingredients
- 4 large baking potatoes, about 300g each
- 1 tbsp vegetable oil, plus extra for the potatoes
- 1 tsp salt, plus extra for the potatoes
- 250g beef mince
- 1 small onion, finely chopped
- 1 garlic clove, crushed
- 1 tbsp tomato ketchup
- 1 tsp English mustard
- 1 tsp Worcestershire sauce
- 100g mature Cheddar cheese, grated
- 2 gherkins, finely chopped
- 1 spring onion, sliced

Prick the potatoes all over with a fork, rub with a little oil and salt and place in the air fryer.

Cook at 190°C for 45 to 50 minutes, turning halfway, until the skins are crisp and the middles are soft when squeezed.

Meanwhile, heat the oil in a frying pan over a medium heat and cook the onion for 5 minutes, then add the mince and cook for 8 minutes, breaking it up, until browned.

Stir in the garlic, ketchup, mustard, Worcestershire sauce and salt and cook for 2 minutes, then remove from the heat.

Halve each potato lengthways and scoop out most of the flesh into a bowl, leaving a thin layer against the skin.

Mash the flesh with half the cheese, then stir in the beef mixture.

Spoon the filling back into the skins, top with the remaining cheese and cook at 190°C for 8 to 10 minutes, until the cheese is melted and golden. Top with the gherkins and spring onion.
