Cheesy Mushroom Toasts

Garlicky mushrooms piled onto crusty toast and topped with melted cheese, air fried for a quick lunch or snack.

Ingredients

  • 250g chestnut mushrooms, thinly sliced
  • 2 tbsp butter
  • 2 garlic cloves, crushed
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 4 thick slices crusty bread
  • 100g vegetarian mature Cheddar cheese, grated
  • 1 tbsp fresh parsley, chopped

Method

  1. Melt the butter in a frying pan over a medium-high heat and cook the mushrooms for 6 minutes, until golden and the liquid has evaporated.

  2. Add the garlic, thyme, salt and pepper and cook for 1 minute.

  3. Preheat the air fryer to 190°C and toast the bread for 2 minutes.

  4. Pile the mushrooms onto the toast and top with the cheese.

  5. Cook 2 slices at a time for 3 to 4 minutes, until the cheese is melted and bubbling.

  6. Sprinkle with parsley and serve hot.
