Potato, Cheese & Bacon Bites
Mashed potato mixed with bacon and Cheddar, rolled in breadcrumbs and air fried into golden, crunchy bites.
Ingredients
- 600g floury potatoes, peeled and cut into chunks
- 6 rashers streaky bacon, finely chopped
- 100g mature Cheddar cheese, grated
- 2 spring onions, finely sliced
- 1 tsp salt
- 1/2 tsp ground black pepper
- 3 tbsp plain flour
- 1 egg, beaten
- 60g dried breadcrumbs
- 1 tbsp vegetable oil
Method

Boil the potatoes in salted water for 15 minutes until soft, drain well and mash until smooth. Leave to cool for 10 minutes.

Fry the bacon in a dry frying pan over a medium heat for 6 minutes until crisp, then drain on kitchen paper.

Mix the mash, bacon, cheese, spring onions, salt and pepper in a bowl.

Shape into 16 balls or small cylinders. Roll in the flour, then the egg, then the breadcrumbs.

Preheat the air fryer to 200°C and brush or spray the bites lightly with the oil.

Cook in two batches for 10 to 12 minutes each, turning halfway, until golden and hot through the middle.

Serve warm with ketchup or a dip.
